Who doesn't love ice cream, right friends?! It all started when our friends introduced us to Magnum when we moved to the Netherlands. It was summer, and we got hooked! Quickly, I searched for a vegan and healthier alternative to make at home and share with you. It also became the favorite of the kids who come to visit :)) The moment you crack the chocolate shell on top is super fun—I think you all will love it!
Bananas, Coconut, Nuts (if using nut-based milk), Chocolate (soy-free if specified)
Gluten, Dairy, Eggs, Soy (if using soy-free chocolate), Nuts (if using nut-free milk)

5 frozen bananas
2 tablespoons solid part of canned coconut milk (I have a recipe for homemade coconut milk here)
2 tablespoons maple syrup or sweetener of your choice
1 teaspoon vanilla extract
1/2 cup plant-based milk
70% dark chocolate chips for frosting on top
Prepare the Bananas: Make sure your bananas are fully frozen before starting. Peel and slice them before freezing for easier blending.
Blend the Base: In a blender, combine the frozen bananas, solid coconut milk, maple syrup (or sweetener), vanilla extract, and plant-based milk. Blend until smooth and creamy. For better consistency, use less liquid.
Serve: Pour the blended mixture into cups or bowls.
Melt the Chocolate: In a microwave or using a double boiler, melt the dark chocolate chips until smooth.
Frost the Top: Pour the melted chocolate over the banana mixture in the cups. Let it sit for 15-20 minutes in the freezer to harden and form a crispy shell.
Make Ahead: You can make this dessert ahead of time and store it in the freezer. Take it out 15 minutes before serving to allow it to soften slightly.

Tip: Use less liquid in the blender for a thicker, creamier consistency.
Variation: Add a pinch of sea salt or some chopped nuts to the chocolate for an extra crunch and flavor.
