2 cups peas (fresh or frozen)
1/4 cup fresh parsley
1/4 cup fresh mint
1 tablespoon white balsamic vinegar
1 tablespoon lemon juice
2 tablespoons olive oil

Blanch the Peas: Bring a pot of water to a boil. Add the peas and blanch for 2-3 minutes until bright green and tender. Immediately transfer the peas to a bowl of ice water to stop the cooking process. Drain well.
Process the Ingredients: In a food processor, combine the blanched peas, parsley, mint, white balsamic vinegar, lemon juice, and olive oil. Process until you reach a smooth consistency. If desired, add a few extra peas at the end and pulse a couple of times for added texture.
Season and Serve: Season the pea mash with salt and pepper to taste. Serve with feta cheese and radish slices if desired.
Tip: For a creamier texture, add a tablespoon of Greek yogurt or a splash of coconut milk.
