Ingredients

2 large or medium orange sweet potatoes

1 cup black beans, cooked

1 cup corn kernels, cooked

1/2 red onion, diced

1 teaspoon paprika

1 avocado

1 lime, juiced

1 jalapeño, finely chopped

Salt and pepper to taste

Olive oil for drizzling

Directions

Prepare the Sweet Potatoes:

Preheat your oven to 400°F (200°C). Wash the sweet potatoes and prick them several times with a fork. Place them on a baking sheet, drizzle with a little olive oil, and bake for 40 minutes or until they are tender and can be easily pierced with a fork.

Prepare the Bean Mixture:

While the sweet potatoes are baking, heat a small amount of olive oil in a pan over medium heat. Add the diced red onion and sauté until translucent. Add the cooked black beans, corn kernels, and paprika. Stir well and cook for another 5 minutes. Season with salt and pepper to taste. Set aside.

Prepare the Avocado Mash:

In a bowl, mash the avocado with a fork. Add the lime juice, finely chopped jalapeño, salt, and pepper. Mix until well combined.

Assemble the Stuffed Sweet Potatoes:

Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut them in half lengthwise and carefully scoop out a small portion of the flesh to create a well for the stuffing.

Fill the Sweet Potatoes:

Fill each sweet potato half with the bean and corn mixture. Top with a generous dollop of avocado mash.

Serve:

Serve the stuffed sweet potatoes warm, garnished with additional lime wedges and fresh cilantro if desired.
