Ingredients

1 head of cauliflower (for cauliflower rice)

1 cup soybeans (edamame), cooked

1/2 avocado, sliced

1 cup grated carrot

1 cup arugula

Salt and pepper to taste

Optional toppings: sesame seeds, nori strips, soy sauce, or your favorite poke sauce

Directions

Prepare the Cauliflower Rice:

Remove the leaves and stem from the cauliflower. Grate the cauliflower using a box grater or pulse it in a food processor until it resembles rice grains.

Assemble the Bowl:

Base: Place the cauliflower rice at the bottom of your bowl.

Add the Toppings:

Add the cooked soybeans, sliced avocado, grated carrot, arugula, and pickled onions on top of the cauliflower rice.

Season:

Season with salt and pepper to taste. Add optional toppings like sesame seeds, nori strips, soy sauce, or your favorite poke sauce for extra flavor.

Serve:
