Heat the Pan: Place a frying pan over high heat. Do not use a Teflon or non-stick pan!
Add the Oil: When the pan is very hot, add enough olive oil to cover the bottom. You'll know the pan is hot enough when the oil smokes slightly but does not bubble.
Crack the Egg: Carefully crack the egg into a small bowl. This makes it easier to slide the egg into the pan without breaking the yolk.
Cook the Egg: Gently slide the egg from the bowl into the hot oil. The egg white should start to bubble and sizzle immediately. Sprinkle red pepper flakes and oregano over the egg, and add salt and pepper to taste. Cook without moving the egg, using a spatula to gently loosen the edges as they cook.
Finish Cooking: Continue to cook until the edges are golden brown and crispy, about 2-3 minutes.
Serve: Carefully remove the egg from the pan using a spatula, and let any excess oil drip off. Serve immediately and enjoy the crispiest egg of your life.
Tip: Use a stainless steel or cast iron pan to achieve the best crispy texture.
