2 eggs
2 egg whites
1 tablespoon olive oil
240ml warm water
2 1/2 cups almond flour
40g psyllium husk
1 tablespoon (13g) baking powder
1 teaspoon salt
1 teaspoon xanthan gum
Preheat the Oven: Preheat your oven to 180°C (350°F). Grease a loaf pan or line it with parchment paper.
Mix the Dry Ingredients: In a large bowl, combine the almond flour, psyllium husk, baking powder, salt, and xanthan gum. Mix well.
Beat the Eggs: In a separate bowl, beat the eggs and egg whites with the olive oil.
Combine Ingredients: Gradually add the egg mixture to the dry ingredients, mixing well. Slowly add the warm water, mixing until a thick batter forms.
Transfer to the Pan: Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake the Bread: Place the loaf pan in the oven and bake for 45 minutes. Check your bread after 15 minutes; if it’s already brown, cover it with aluminum foil and continue baking for the remaining 30 minutes.
Cool and Slice: Allow the bread to cool in the pan for 10 minutes, then remove it from the pan and let it cool completely on a wire rack. Slice and serve, or slice and freeze for later use.
Tip: For a different flavor, add herbs or spices to the batter.
Variation: Substitute almond flour with sunflower seed flour for a nut-free version.
